Cauliflower and Bacon Soup

Ingredients

  • 30 g butter 

  • 1 onion diced medium 

  • 500 g cauliflower roughly chopped 

  • 3 cups chicken stock (liquid) 

  • 1 tbs parsley chopped 

  • 1 cup cheese grated 

  • 1/2 cup cream 

  • 3 bacon rashers diced 


Instructions

Step 1 

Melt butter, add the onion and bacon and cook until soft. 

Step 2 

Add cauliflower and cook for 2 minutes, stirring. 

Step 3 

Add chicken stock, cover and simmer for 15 minutes until cauliflower is tender. 

Optional - Blend with a stick blender till desired consistency 

Step 4 

Stir in the cream, grated cheese and parsley. Serve with homemade croutons and/or crusty bread.
