Chewy Muesli Bars

This muesli bar recipe ticks all the boxes for me. They are are chewy, easy to make, adaptable and everyone loves them. They are the perfect snack when enjoying the great outdoors or adding to a lunch box.
Give it a go, you won't regret it.
This recipe takes only 10 minutes to prepare then needs about 2 hours to set in the fridge. The number of bars is dependant on the size you cut but generally you get 15-18 bars per batch.
Ingredients
85 grams (6 Tbsp) unsalted butter
⅓ cup dark brown sugar (homemade)
155 grams honey
1½ teaspoons vanilla extract (homemade)
Pinch salt
2 cups of 1-Minute Oats (do not use regular porridge oats)
1¾ cups rice bubbles
½ cup almond flakes
¼ cup flax meal or wheat germ
½ cup of dried fruit (optional)
Topping
Select your preferred option:
⅓ cup mini chocolate chips (or to taste)
200g chocolate melts and 2tbsp oil.
Instructions
Line a slice tray with baking paper (with overhang) and spray lightly with cooking spray.
In a large pot, combine the butter, brown sugar and honey. Bring the mixture to a boil over medium-high heat, stirring constantly. Lower the heat and simmer until the sugar dissolves and the mixture is slightly thickened, about 2 minutes. Remove the pan from the heat and stir in the vanilla essence and salt.
Add the oats, rice cereal, almonds and flax meal (or wheat germ) and dried fruit (optional) to the pan and combine well.
Transfer the mixture to the prepared pan and press down lightly with a rubber spatula to even out. The mixture should be tightly compacted in the pan.
Add your topping (either).
Sprinkle the mini chocolate chips over top, adding more or less to suit your taste, and press down firmly with the spatula so the chips stick
Melt the chocolate and oil together in the microwave and pour over the slice, tilting the slice to spread evenly.
Place the pan in the refrigerator for 1½ - 2 hours to cool and set.
Use the baking paper overhang to remove the slice from the tray and cut into your desired sizes using a sharp knife.
Notes:
I use a long bread knife to cut my slice into bars.
Store the bars in an airtight container in the refrigerator. If you have to stack them, be sure to use baking paper between the layers, otherwise they'll stick together.
