Spring Onions

These little guys are easy to grow and I love having them in my freezer to add to soups, stews/casseroles and stir fry's etc. throughout winter. They are easy to preserve, but you cannot vacuum seal them because they naturally produce gases that can compromise the vacuum seal, leading to potential spoilage and even the growth of harmful bacteria like Clostridium botulinum, which causes botulism.
Simply wash and remove any outer leaves that are damaged or old and dice them up as required for cooking.
Place them in zip lock bags and into the freezer.
They are now ready for use throughout winter. It is easy to open the bag, remove the amount you need for a recipe and re-seal the bag and place back in the freezer.
The same process is used for brown onions. I have bags of diced and sliced onions in my freezer ready for use.
Having these vegetable staples prepared and on hand saves a lot of meal prep time or visits to the supermarket.
