The Sweetest Way to Keep Your Peppers from Going to Waste

This season has been nothing short of a capsicum paradise for me. An abundance of vibrant fruits ripened all at once, creating colour in my garden. I found myself sharing the bounty with friends, but I also made the wise decision to freeze the rest. Red capsicum has become a staple in my kitchen, especially in my slow cooker curry and rice dishes, so I knew that those frozen treasures would be a lifesaver during the chilly winter months.





The stars of my garden this season were the delightful 'Ajvarski' and 'Round of Hungary' varieties, sourced from the ever-reliable 'Dave's Seeds' (see link below). Their flavours and vibrant colours made them the perfect choice for my culinary adventures.


To preserve my harvest, I sliced the capsicum into the desired sizes and laid them out on oven trays, preparing them for the freezer. Once frozen, I placed them in small sandwich bags, ready to be used during the colder months.
