Golden syrup is an ingredient that I use regularly and is expensive to purchase. This recipe is easy and ensures you never run out of this kitchen staple.

Ingredients

100g Sugar & 4 Tbsp water

Extra 500g Sugar

Extra 300ml of boiling water in the kettle ready to use.

3 slices of lemon

Method

  1. Mix the first amounts of sugar and water together in a saucepan and heat, stiring occasionally until the syrup begins to turn a caramel colour. (Do not let it get too dark or it will burn.) Takes aproximately 5 minutes.

  2. Immediately add the boiling water, stirring constantly

(Be careful; it will hiss and spit up at you initially)

  3. Add the extra sugar, stirring till dissolved

  4. Add the three slices of lemon (this will stop the syrup from burning)

  5. Simmer slowly for 45 minutes to 1 hour, stirring occasionally

  6. Test the syrup by adding a few drops onto a plate. If it holds it's shape it is ready. Remember: The golden syrup will thicken as it cools.

  7. Place into sterilised jars and keep in the fridge, ready to use for a few months. I cannot tell you exactly how long as mine never lasts. Each batch makes approximately 750ml or 900g (I got one and a half jars).

Costing

Golden Syrup costs approximately $6.00/850g jar or $0.71/100g at the supermarket

This recipe costs $0.84/900g, which is under $0.01/100g
