Granola

This recipe can be used as a base and any combination of nuts and dried fruit can be added. I enjoy almond and cranberries but have added any type of nut I have available and different fruits I have dried from my fruit trees such as pears, apples, plums, nectarines, peaches etc.






Ingredients

  • 3 cups of rolled oats

  • 1 1/2 cups of nuts 

  • 2tbsp flaxseed meal

  • 1tsp kosher salt

  • ½ cup  or 155g maple syrup or honey

  • ½  cup or 110g discard sourdough starter or 1 egg white

  • ¼ cup neutral oil

  • 1tbsp vanilla essence

  • ½ cup dried fruit of your choice


Instructions

  1. Preheat your oven to 130 degrees Celsius and line a baking tray with baking paper.

  2. In a large bowl mix together the rolled oats, nuts, flaxseed meal and salt

  3. In a small bowl mix together the maple syrup/honey, sourdough starter/egg white, oil and vanilla essence.

  4. Pour the small bowl into the large bowl and mix well.

  5. Pour the mixture onto the baking tray and press down as you spread it out.

  6. Bakes for 50 minutes until golden brown and the kitchen is filled with a beautiful nutty aroma.

  7. Remove from the oven and gently press the dried fruit over the top.

  8. Allow to cool completely in the baking tray then break up and store in an air tight container.
