Onion Powder

I had some self sown onions which grew out of season and were ready to harvest now. This was to my advantage as I had just run out of onion powder in my kitchen staples. I obviously need to make double last years amount. The process is simple and takes minimal work.


I peeled and diced my onions and placed them on my dehydrator trays and left them alone for 12 hours. At this point I condensed them to two trays and left them to continue drying overnight.

The beauty of dehydrating is that you cannot over dry and spoil anything. This is why I often set my dehydrator to work for me overnight when I am asleep.

It is always sad to see how much the volume has decreased once the drying process is completed, but the end product is very concentrated. One cup of dehydrated product is equal to a quarter a cup of dried product or one tablespoon of powder.


I placed the dried onions into my coffee grinder (cheap KMart model) and turned them into a beautiful jar of fine powder. I did not keep any dried diced onion as I have loads of self sown spring onions in the garden to use if needed.

This is a must have kitchen staple for me, when any cooked dish calls for one diced onion, I just place one tablespoon into the dish and it is perfect.


My thinking is have one good cry when preparing the bulk load for drying to make many dishes throughout the year and no onions going bad in the pantry.
