Munchies

This simple but delicious biscuit, which I am not sure is a true Anza,c but more like a rolled out biscuit. We call them Munchies, and it is the name that has been used in my family for generations.

These biscuits are soft and chewy and are elevated to the next level when using homemade golden syrup.

I live with the belief that these biscuits are healthy, if muesli bars are healthy because they have rolled oats, then so are these biscuits.





Ingredients

1 Cup Sugar

1 Cup Rolled Oats

1 Cup Self-raising Flour

¼ Cup Desiccated Coconut

125g Butter

1 Tbsp Golden Syrup

2 Tbsp Boiling Water

1 Tsp Bicarbonate of Soda


Instructions

1. Preheat oven to 180°C and line 2 large oven trays

2. Mix sugar, oats, flour, and coconut together in a bowl

3. Melt butter, golden syrup, and boiling water, then add the bicarbonate of soda.

4. Pour the syrup mix over the dry ingredients and mix well

5. Place spoonfuls (I use my cookie scoop) onto a lined oven tray, leaving space for biscuits to spread and double their size.

6. Bake for 10 minutes or until they are lightly golden brown

7. Let sit on the tray for 5 minutes for the golden syrup to set, then place on a cooling rack.


Make a cup of tea and enjoy.


Notes:

Makes approximately 22-25 biscuits per batch.

These biscuits freeze well
